Apple Pie

  Serves: 8 to 10

Ingredients

  • 2½ cups (310 g) all-purpose flour, plus more for dusting
  • 2 tbsp sugar
  • 250g vegan butter*, diced into small pieces, frozen for 1 hour
  • 6 tbsp ice water
  • 6 Granny Smith apples
  • 1.5 cups brown sugar
  • 1 lemon, juiced
  • 5 tbsp cornflour
  • 2 tbsp margarine, melted
  • Pinch salt
  • 4 tsp cinnamon, divided

Directions

Step 1

Preheat oven to 180°C.

Step 2

To make pastry, sift flour into a large bowl. Using a few pieces at a time and using the tips of your fingers work the margarine into the flour until it resembles fine bread crumbs, adding more margarine as you go. When all the margarine is worked in, add chilled water and gently, using your fingertips, combine to a smooth dough.

Step 3

Divide mix into two discs, wrap in clingfilm and place in the fridge for 30 mins.

Step 4

To prepare the filling, peel and chop apples into 2cm slices, place in a large bowl and squeeze over lemon juice. Then add sugar, cornflour, cinnamon and salt and gently toss to combine.

Step 5

Prepare pie dish by giving a light covering with some melted margarine. Using a rolling pin, on some baking paper roll out pastry until it is approximately 1cm thick. Gently place over pie dish and push into corners. Allow pastry to overhang. Pour apple and sugar mixture in. Then roll remaining pastry into a circle slightly larger than the pie dish.

Step 6

Gently lap pastry over pie filling and, using a fork, press down firmly around edges giving a nice indentation. Using a sharp knife trim any overhanging pastry. Using a fork, pierce the top of the pastry 3-4 times to allow steam to escape.

Step 7

Using a pastry brush, brush over remaining melted margarine and give pie a sprinkle of caster sugar and cinnamon.

Step 8

Bake for 50-60mins until pastry is golden and cooked.

Step 9

Serve with whipped coconut cream or vegan icecream.
