Banana Bread

  • 3 cups plain flour
  • 1 tbsp baking powder
  • 1 tsp bi carb soda
  • 1 tsp salt
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 tsp cinnamon
  • 1 tsp dried ginger
  • 2 ripe bananas, mashed
  • 2¾ cups soy milk
  • 1 tbsp vinegar
  • 1 tbsp molasses or golden syrup
  • 1 tsp vanilla
  • ½ cup of nuts, seeds or chocolate chips
  • 100gms vegan dark chocolate
  • 1tsp vegan butter or margarine


Step 1

Preheat oven to 170°C (fan forced). Grease and flour two loaf pans.

Step 2

In a medium bowl mix together all of your wet ingredients, including the mashed bananas, then sit to the side.

Step 3

In a large bowl sift together all of the dry ingredients.

Step 4

While gently whisking, pour your wet ingredients into the dry ingredients, and continue gently whisking until the batter is smooth. Stir in your choice addition of nuts, seeds or chocolate chips. Pour the batter Into the prepared loaf tins and bake at 170°C for 45-55 minutes, until a skewer test comes out clean.

Step 5

For chocolate ganache topping: Melt 100gm dark chocolate with 1 teaspoon of butter and 1/4 cup of soy milk in a small saucepan over a low heat. Stir until melted and smooth, then pour over the banana bread and serve.
