Black Bean & Beet Burger Patties

Ingredients

  • 2 cans black beans, rinsed and strained
  • 1 medium beetroot, boiled, skinned and diced
  • 1 large onion, diced
  • 3 tbsp BBQ sauce
  • 2 tbsp white miso paste
  • 2 cups panko breadcrumbs
  • 1 cup sunflower seeds
  • ½ cup nutritional yeast
  • 2 tbsp potato starch
  • ¼ tsp white pepper
  • 2 tsp onion powder
  • 4 tbsp oil
  • 2 tsp smoked paprika
  • ½ tsp cumin
  • 1 small bunch of chives, chopped
  • Salt to taste
  • ¼ cup plain flour, for dusting
  • For serving - buns, lettuce, pickles, vegan mayo, vegan bacon, vegan cheese, bbq sauce, pineapple and beetroot

Directions

Step 1

In a small fry pan, on a low to medium heat, sauté diced onion in oil. Once the onions are translucent add in the paprika and cumin, stir until fragrant, about 30 seconds, and remove from the heat. Put to the side.

Step 2

Next, in a food processor, add the bread crumbs, nutritional yeast, sunflower seeds, onion powder, pepper and potato starch. Process until a fine crumb has formed. Empty into a large bowl and put to the side.

Step 3

Then place the diced beetroot, white miso paste, bbq sauce and half of the black beans into the food processor and process until smooth. Empty into the bowl with the fine crumb mixture.

Step 4

Add the onion mixture, remaining whole black beans and the chives, and mix until well combined. Season with salt to taste.

Step 5

Refrigerate the patty mixture for 20 minutes to firm up.

Step 6

Once the mixture has firmed, weigh out into 5 portions, at approximately 200g per portion. Place the flour onto a plate and dust the patties as you form them into circular disks. If using for burgers, use the bread rolls as a guide for width and thickness desired.

Step 7

Once the patties are formed you can either refrigerate until you’re ready to cook, or move straight onto preparing your fry pan.

Step 8

When you’re ready to fry, add a small amount of oil to a large fry pan and bring up to a medium heat. Fry the patties until golden on each side and heated through.

Step 9

Serve individually with accompanying salad, or on a burger stacked with lettuce, pickles, mayo, vegan bacon, vegan cheese, bbq sauce, pineapple and beetroot.

Step 10

Patties can also be made and frozen in advance prior to cooking. They will keep frozen for up to 3 months, defrost completely prior to cooking.
