Breakfast Quesadillas

  • 2 tortillas
  • 1 avocado
  • 1 lime, juiced
  • Few sprigs coriander
  • 1 tomato
  • 1 piece spring onion
  • ¼ cup grated vegan cheese
  • Salt & Pepper to taste


Step 1

Mash avocado with lime juice and season to taste. Finely dice tomato, spring onion and coriander and combine.

Step 2

Heat frying pan over med-low heat. Spray with oil.

Step 3

On chopping board, assemble quesadillas, on one tortilla spread mashed avocado mixture, evenly distribute tomato salsa mix and finally sprinkle with grated cheese. Top with second tortilla. Gently place in a hot pan and cook on 2-3 mins each side or until golden and cheese has melted.

Step 4

Remove from pan and cut into wedges. Serve Hot.
