Bruschetta

Ingredients
- 1 baguette
- 1 tbsp olive oil
- ½ cup red onion, finely chopped
- 3 ½ cloves garlic, minced
- 1 bunch fresh basil, finely chopped
- 1 tbsp balsamic vinegar
- ½ tsp sea salt
- 2 tbsp olive brine
- 2 tbsp kalamata olives, chopped
- Fresh basil
- Handful rocket
- Balsamic glaze
Directions
Step 1
Preheat oven to 220°C. Cut baguette into ½ inch slices on an angle. Place slices on a baking sheet & drizzle with olive oil. Bake until golden brown (approx 5mins). Remove from oven.
Step 2
Cut a garlic clove in half and rub over the warm bread slices.
Step 3
Add tomatoes, red onion, garlic, basil, balsamic vinegar, olive brine and sea salt in a large bowl & mix well.
Step 4
Spoon mixture onto bread slices. Garnish with olives, fresh basil, rocket, and balsamic glaze. Serve immediately.
