Cheesy Ham & Corn Quiche

  Serves: 8 to 10

Ingredients

  • For Quiche- 300g semi firm silken tofu
  • 100g firm tofu, cut into small cubes
  • ¼ cup nutritional yeast
  • 1 tbsp crushed garlic
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 1 tbsp chickpea flour
  • 1 tsp American mustard
  • ½ tsp salt
  • ½ tsp ground turmeric
  • ¼ tsp black salt
  • Cracked pepper to taste
  • 200g vegan ham, diced*
  • 2 cups sweet corn kernels
  • 1 red capsicum, finely diced
  • 1 bunch chives, finely chopped
  • 1 cup vegan cheese shreds
  • For Pastry - 200g butter
  • 300g plain flour - extra for rolling
  • 50g chickpea flour
  • 20g nutritional yeast
  • ½ tsp salt
  • 2-4 tbsp cold water

Directions

Step 1

Firstly to make your pastry, add all ingredients to a food processor and process until a dough forms. Turn out onto bench and knead lightly to form a round disk. Wrap dough in cling wrap and refrigerate for 15-20 minutes.

Step 2

While your dough is resting in the fridge prepare the filling. In a food processor add all ingredients except for ham, corn, cheese, capsicum and chives. Process until the mixture is smooth, the consistency of hummus. Pour into a medium bowl and add the remaining ingredients of ham, cheese, capsicum, corn and chives. Mix together well and refrigerate until required.

Step 3

Preheat your oven to 180°C. Grease and dust a medium round spring form tin or quiche pan with flour.

Step 4

On a floured surface lightly knead and roll out your pastry, to about 1cm thick. Line your tin with the pastry and, using a fork, prick the pastry base. Blind bake for 15minutes, or until starting to colour.

Step 5

Pour the filling into the pastry shell and bake for 40-50 minutes, or until firm to touch and lightly golden on top.

Step 6

Once quiche is finished in the oven you can either serve warm or allow to cool and then refrigerate for a few hours prior to eating.
