Chocolate Slice
* We used Arnotts Nice Biscuits. For a more chocolatey slice, you could use Arnotts Choc Ripple which are also vegan. Or use Woolworths Free From Scotch Finger biscuits to make the slice gluten free
Ingredients
- 200g plain biscuits*
- 40g Rice Puffs
- 30g shredded coconut
- 200g dark chocolate
- 60g Nuttelex (or another vegan spread)
- 1 cup (240mL) sweetened condensed coconut milk
- 200g Sweet William chocolate buttons
Directions
Step 1
Prepare a slice tray with baking paper, making sure that 2 sides overhang.
Step 2
Add biscuits to a food processor & blitz until they are fine crumbs.
Step 3
Transfer biscuits to a bowl & mix together with the coconut and rice puffs.
Step 4
In another mixing bowl, add the dark chocolate, sweetened condensed coconut milk and nuttelex. Place in microwave for 30 seconds & stir. Repeat this until smooth & creamy.
Step 5
Add dry ingredients to chocolate mix & quickly stir until combined. Add the mixture to your prepared slice tray & spread out into an even layer. Refrigerate for 30-60 minutes or until firm.
Step 6
Add the chocolate buttons to a small bowl, microwave for 30 seconds & stir. Repeat until melted & smooth. Pour over the slice & spread out to evenly cover the biscuit layer. Return to the fridge for another 30 minutes until set.
Step 7
Cut into slice & serve.
