Ingredients

  • 2 tbsp extra virgin olive oil
  • 50g chopped tomatoes
  • 100g chopped onion
  • 10g chopped garlic
  • 50g chopped capsicum
  • 5g chopped parsley
  • 1 tsp dried oregano
  • 200g vEEF mince
  • 1 tsp cayenne pepper or chilli powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • salt and pepper
  • Juice and zest of 1 lemon
  • 300g water
  • 500g plain flour
  • 10g dried yeast
  • 10g salt
  • 10g extra virgin olive oil

Directions

Step 1

Combine flour and salt in a bowl. Add the oil, yeast, water and mix until combined.

Step 2

Work the dough until a smooth texture forms. Portion in 75g balls and let it prove for 15 minutes.

Step 3

Meanwhile, combine remaining ingredients into a large bowl and mix well.

Step 4

Preheat oven to 180C and line a baking tray with baking paper.

Step 5

Roll the portioned dough into 15cm circles. Spoon the filling into the middle of the circles (around 40/50g in each).

Step 6

Close by folding the edges towards the centre creating a triangle.

Step 7

Place onto baking tray and bake for 15 minutes or until golden brown.
