Ginger Cake

Ingredients

  • 250g plain flour
  • 1 1/4 tsp baking powder
  • 1 1/4 tsp baking soda
  • 4 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 160g (3/4 cup) brown sugar
  • 1/2 tsp salt
  • 160ml (2/3 cup) coconut oil
  • 200g golden syrup
  • 200g date syrup
  • 360ml (1 1/2 cup) boiling water
  • 75g icing sugar (for the lemon glaze)
  • Juice 1/2-1 lemon (for the lemon glaze)
  • 2tbsp orange zest (for the lemon glaze)

Directions

Step 1

1. Preheat oven to 180 degrees Celsius on fan forced. 2. whisk together the plain flour, baking powder, baking soda, ginger, cinnamon, allspice, brown sugar, and salt in a large mixing bowl 3. once mixed, add the golden syrup, coconut oil, date syrup and boiling water to the bowl. Mix until no flour lumps remain 4. place baking paper in a decently sized tray, and pour the batter into the tray 5. Place in the oven and cook for 25-35 minutes 6. once it is cooked properly, leave to cool for 30 minutes 7. Once cool, begin to make the lemon glaze, in another bowl, add the icing sugar in a bowl and gradually mix in enough lemon juice and orange zest until it reaches a thick, drizzling consistency. Drizzle the glaze over the cake and cut into squares and serve.
