Green Couscous

  Serves: 4


  • 150mg couscous
  • 160ml boiling water
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp cumin
  • 20g parsley
  • 20g coriander
  • 2 tbsp chopped tarragon
  • 2 tbsp chopped dill
  • 2 tbsp chopped mint
  • 90ml olive oil
  • 50g pistachios
  • 30g rocket, finely chopped
  • 1 green chilli, finely chopped
  • 3 spring onions, finely chopped


Step 1

In a large bowl, pour boiling water over couscous and cover bowl for 10 minutes.

Step 2

Meanwhile, heat 1 tbsp of oil in a medium frypan. Add the onion, salt and cumin and fry until golden. Set aside & allow to cool slightly.

Step 3

Add the pistachios to the frypan and roast for 1 - 2 minutes, continually stirring. Remove from heats & roughly chop.

Step 4

In a food processor, blend together the parsley, coriander, tarragon, dill, mint and olive oil to make a paste.

Step 5

Fluff up the couscous with a fork & then gently incorporate the onion mixture, herbs, pistachios, rocket, chilli (if using) and spring onions. Serve immediately.
