Lemon Coconut Loaf

  Serves: 10 to 12


  • 1 cup soy milk
  • 3 tsp vinegar
  • ¼ cup oil
  • Zest of 2 large lemons
  • Juice of 1 large lemon
  • 1 tsp vanilla extract
  • 1½ cup plain flour
  • 1½ tsp baking powder
  • ½ tsp bi carb soda
  • ¾ tsp salt
  • ¾ tsp caster sugar
  • ½ tsp ground turmeric
  • ½ cup dessicated coconut


Step 1

Preheat oven to 180°C.

Step 2

In a medium bowl whisk together all wet ingredients and set to the side for 5 minutes.

Step 3

In a large bowl sift together all of the dry ingredients, except the coconut. Add coconut to the bowl after sifting.

Step 4

Gently whisk your wet ingredients into your dry ingredients until batter is smooth and just combined. Try not to over mix.

Step 5

Pour the batter into your well-greased loaf pan and bake for 50 minutes, or until a skewer comes out clean.

Step 6

Serve glazed or unglazed, warm, cold or toasted
