Lentil Soup

Ingredients

  • Olive Oil Spray
  • 1 Onion, finely chopped
  • 1 cloves Garlic, crushed
  • 1 tablespoons Tomato Paste
  • 1 teaspoons Ground Cumin
  • 1 teaspoons Ground Coriander
  • ¾ cup Dried Red Lentils, rinsed
  • 1 Carrot , finely chopped
  • 2 cups Vegetable Stock Liquid
  • 2 tablespoons Natural Coconut Yoghurt
  • ¼ cups Coriander Leaves

Directions

Step 1

Spray a saucepan with oil and heat over medium heat. Add onion and garlic. Cook, stirring often, for 2 minutes or until soft. Add tomato paste and spices. Cook, stirring constantly, for 1 minute.

Step 2

Stir in lentils, carrot, stock and 3 cups (750ml) water. Bring to the boil, then reduce heat to medium-low. Simmer, partially covered, for 30 minutes or until lentils and carrot are tender. Stir occasionally during cooking.

Step 3

Season with freshly ground black pepper.

Step 4

Divide between bowls. Top with yoghurt and sprinkle with coriander to serve.
