Mediterranean Pasta

  Serves: 4

Ingredients

  • 1 punnet cherry tomatoes
  • 1 red capsicum
  • 3 cloves crushed garlic
  • 6 sundried tomatoes
  • 1 tbsp capers
  • 10 kalamata olives
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Pack of spaghetti
  • 1 jar passata
  • ½ cup boiling water
  • 1 small bunch basil (finely chopped leaves)

Directions

Step 1

Preheat oven to 200°C.

Step 2

Chop all the vegetables into even bite-sized pieces & place them roasting ingredients in a baking dish. Drizzle with olive oil, capers & pepper & cook in the oven for 15 minutes.

Step 3

Remove from oven, stir, add the pasatta & put back in the oven 20 minutes.

Step 4

Meanwhile, cook spaghetti to packet directions.

Step 5

Drain the spaghetti & return it back to the pot.

Step 6

Take the sauce out of the oven & stir through the spaghetti.

Step 7

Garnish with basil leaves & serve immediately.
