Potato Bake

Ingredients

  • 7 medium potatoes, thinly sliced
  • 1 can coconut cream
  • 200mls plant based milk (soy/oat/almond)
  • 1 packet french onion soup mix
  • 2 cloves garlic, crushed
  • 3 Tbsp nutritional yeast
  • 1 cups grated vegan cheese (optional)

Directions

Step 1

Preheat oven to 180°C.

Step 2

Layer the potatoes into a deep baking dish. If using vegan cheese, add a sprinkle of cheese between potato layers.

Step 3

Mix together the coconut cream, milk, french onion soup mix and garlic, and then pour over the potatoes. Cover with foil & place in preheated oven.

Step 4

Check the bake every so often to see how soft it is. After about 60-75 mins, it should be cooked through. Once potatoes are soft, remove the foil & increase heat to 200 degrees until golden on top.

Step 5

Serve immediately.
