Quinoa Salad

  Serves: 4


  • 1.5cup mixed quinoa
  • 3cups water
  • 1 lebanese cucumber, diced
  • 1 punnet cherry tomatoes, cut in half
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • ½ bunch continental parsley, finely chopped
  • 1 bunch mint, finely chopped
  • ¼ cup pistachios, roughly chopped
  • ¼ cup almonds roughly chopped
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 1 clove garlic, minced
  • Salt & pepper to taste


Step 1

Bring 3 cups water to boil, add 1 tbsp salt and quinoa. Keep cooking over medium heat to maintain a simmer until water has been absorbed.

Step 2

Let quinoa sit for a few minutes before placing in a large bowl to cool.

Step 3

When quinoa has cooled add all chopped vegetables, herbs and ½ of the chopped nuts. Gently toss to combine.

Step 4

In a small jar, combine olive oil, garlic, lemon and salt and pepper. Shake well to combine and pour over salad and gently toss. Garnish with the remainder of nuts and serve.
