Rice and Bean Salad

  Serves: 4


  • 1 cup cooked rice
  • 400g four bean mix, drained
  • 1 cup green beans, cooked
  • 1 red onion, sliced
  • ½ bunch parsley, chopped
  • 1 punnet cherry tomatoes, halved
  • 4 tbsp extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp wholegrain mustard
  • Salt and pepper to taste
  • Vegan feta cheese to serve (optional)


Step 1

Cook brown rice as per pack instructions, allow to cool.

Step 2

Place all ingredients into a large bowl and mix together gently.

Step 3

Season to taste with salt and pepper.

Step 4

Serve with a sprinkle of crumbed vegan feta if desired.
