Satay Tofu Rice Paper Rolls with Peanut Dipping Sauce

Ingredients

  • 8 sheets of 22cm/8.5" round rice paper
  • 150g Satay flavoured tofu, cut into strips
  • 50g dried vermicelli noodles
  • 8 oak lettuce leaves, shredded
  • 16 mint leaves
  • 1 cup bean sprouts
  • 1 tbsp peanut butter
  • 2 tbsp Hoisin Sauce
  • 1 ½ tbsp white vinegar
  • ⅓ cup plant milk
  • 1 garlic clove, minced
  • ½ tsp crushed chilli or sambal oelek

Directions

Step 1

First prepare the dipping sauce. Combine the peanut butter, hoisin, vinegar, milk, garlic & chilli in a microwave safe bowl, then microwave for 30 seconds. Mix again until smooth. Set aside to cool.

Step 2

Prepare the noodles according to packet directions.

Step 3

Fill a large bowl with warm water. Submerge a sheet of rice paper into the water for around 10 seconds or until just softened. Place on a board or the counter with the smooth side down.

Step 4

Place 2 mint leaves & 2-3 strips of the tofu on the bottom part of the rice paper (the end closest to you.Place the lettuce, vermicelli noodles and bean sprouts in the middle of the rice paper, leaving enough room to roll the sides & ends in. Fold the left and right edges of the rice paper in, then starting from the bottom, roll up to cover the contents. Then keep rolling firmly. The rice paper is sticky, it will seal itself.

Step 5

Repeat with remaining ingredients.

Step 6

Serve immediately with the peanut dipping sauce.
