Smokey Cauliflower Chips & Aioli

  • ½ head cauliflower cut into florets
  • ¼ cup vegan mayonnaise
  • ¼ cup panko breadcrumbs
  • 1tbsp nutritional yeast
  • 1tbsp smoked paprika
  • 1tsp garlic powder
  • 1tsp salt
  • Aioli:
  • ¼ cup vegan mayonnaise
  • 2 tsp smoked paprika
  • 1 garlic clove, minced


Step 1

Preheat oven to 200°C

Step 2

In a large bowl, coat cauliflower florets with mayo, paprika, garlic powder salt and nutritional yeast, tossing well until evenly coated.

Step 3

Pour over panko breadcrumbs and toss gently til well coated.

Step 4

Lay onto a baking tray lined with baking paper and roast for 20-25 minutes until golden and slightly charred.

Step 5

While cauliflower is roasting, combine aioli ingredients in small bowl and mix well.

Step 6

Serve cauli chips with aioli.
