Spiced Sweet Potato Dip

  • 1 large sweet potato
  • 2 tbsp olive oil
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1 tsp cinnamon
  • 2 tsp smoked paprika
  • Salt & pepper, to taste


Step 1

Preheat oven to 180°C.

Step 2

Prick sweet potato with fork, wrap in foil and roast for 30-40 mins until soft.

Step 3

Remove and let cool. While the potato is cooling gently toast spices in a dry pan until fragrant.

Step 4

When potato is cool enough to handle peel skin off and place in a blender.

Step 5

Add olive oil, tahini, lemon juice and spices and blitz until smooth. Season to taste.

Step 6

If the mixture is too thick add tbsp of water until desired consistency.

Step 7

Spoon into a serving bowl and drizzle with extra olive oil and sprinkle smoked paprika.
