Spicy Tomato Sauce

Ingredients
- 4 tbsp olive oil
- 2 cloves garlic, crushed
- 2 hot red chillies, seeded and finely diced (can be omitted or reduced if you don’t like chilli)
- 8 ripe tomatoes, chopped
- 370ml water
- 4 tbsp apple cider vinegar
- 3 tsp salt
- 2 tsp ground cumin
- 20g coriander leaves, chopped
Directions
Step 1
Heat a little (2tsp) of the oil in a medium sized saucepan. Add garlic and chilli (if using) and fry for 2 minutes, stirring continuously.
Step 2
Add remaining ingredients and cook until boiling. Reduce heat and simmer until sauce has thickened (around 10 minutes). Serve immediately.
Step 3
Serve immediately.
