Strawberry Oat & White Chocolate Muffins

Ingredients

  • ½ cup quick oats
  • 3 cup self raising flour
  • ¼ cup caster sugar, brown sugar or coconut sugar*
  • ¼ tsp bi carb
  • 2 tsp cinnamon
  • ½ vegan white choc chips
  • ⅔ cup apple sauce
  • 200ml milk
  • ½ cup yoghurt
  • 250ml oil
  • ½ cup chopped frozen strawberries

Directions

Step 1

Preheat oven to 170°C.

Step 2

Place 12 liners in muffin/cupcake tray.

Step 3

Sift together the flour, bi carb and cinnamon. Stir in oats and white choc chips.

Step 4

In a bowl, whisk together all of the wet ingredients and fruit.

Step 5

Gently incorporate the wet ingredients into the dry and stir until just smooth. Be careful not to over mix.

Step 6

Spoon into liners and bake in the oven for 25-30 minutes, until a skewer comes out clean.

*Sugar can also be omitted for low sugar muffins.

This recipe is easily adaptable, you can experiment with adding in hemp seeds, nut butters (1-2 tablespoons) or different fruits (keep the same total quantity of 1/2 cup).
