Traditional Gravy

  Serves: 4 to 6

Ingredients

  • 3 tbsp plain flour
  • 4 tbsp oil or vegan butter
  • 1 tbsp vegemite
  • 500ml vegetable stock, gently heated.
  • Dash of Port*
  • Dash of Red or white wine*

Directions

Step 1

Heat a saucepan over medium heat and add the oil or vegan butter until it’s melted. Add the flour and mix until you have a roux or thick paste.

Step 2

Keep stirring until the roux starts to brown and then start to add the heated stock, stirring continuously with a whisk to remove any lumps.

Step 3

Stir well until the stock is combined.

Step 4

Add the Vegemite and keep stirring until you get that lovely brown colour.

Step 5

Add a dash of port and wine. Let the alcohol cook out and then taste the gravy.

Step 6

If the gravy is too thick add more stock or water.

Step 7

Simmer on a low heat for about 15 minutes, keep stirring and tasting.

Step 8

Sieve the gravy through a sieve to remove any lumps then pour into a gravy jug and serve.
