Vegan Omelette

  • ¼ cup chickpea flour
  • 1 tbsp cornflour
  • ⅓ cup water
  • 1 tbsp nutritional yeast
  • 1 tsp dried herbs
  • ¼ tsp tumeric
  • ¼ tsp black salt
  • ⅛ cup diced red onion
  • ⅛ cup diced tomato
  • 1 tbsp oil
  • Small handful of vegan cheese (optional)


Step 1

Mix the dry ingredients in a small bowl, add water & stir well until there are no lumps.

Step 2

Add diced tomato and onion (you can use any veggies here or even vegan ham or bacon, stick to around ¼ cup in total).

Step 3

Add oil to non stick fry pan on medium heat. Add batter to pan & cook for around 3-5 minutes. Add lid to pan for the first minute or two. The top of the omelette should look dry before you flip it.

Step 4

Carefully loosen the omelette with a spatula & flip over. Cook the other side for another 3 to 5 minutes until cooked through.

Step 5

Add a little vegan cheese to centre & fold in half before serving
