Vegan Smoked Salmon

This vegan smoked salmon can be used in sandwiches & rolls, sushi or pasta. You can create a creamy sauce using cream cheese, soy milk & nutritional yeast.
Ingredients
- 2 large, thick carrots
- 1.5 tbsp rice bran oil
- 1 tsp of liquid smoke
- 1 tsp lemon juice
- 1 tbs nutritional yeast
- pinch of smoked paprika.
- Vegan cream cheese, dill, capers & red onion to serve.
Directions
Step 1
Start these 2-5 days ahead as they need to marinate.
Step 2
Salt bake two fat medium length carrots. Lay a blanket of salt in a ceramic dish, arrange carrots so they are not touching, then top with salt till buried.
Step 3
Bake in a preheated oven at 175 for one and a half hours.
Step 4
Cool. Peel and slice into small flakes.
Step 5
For marinade, combine rice bran oil, liquid smoke, lemon juice, nutritional yeast and a smoked paprika. Let carrot marinate in fridge for 2-5days.
Step 6
When ready to serve, mix the 'salmon with some vegan cream cheese, fresh dill, red onion, capers & white paper. Spread on slices of crusty bread or bagels and top with some more fresh dill.
